Golden Spinach & Cheese Stuffed Pastry Pockets

Crispy, flaky pastry filled with a rich spinach and cheese mixture—perfect as an appetizer, snack, or light meal. These golden-baked pockets are packed with savory flavor and irresistible texture in every bite!

Ingredients

For the Filling:

2 cups fresh spinach, chopped

1 cup feta cheese, crumbled

½ cup mozzarella cheese, shredded

1 small onion, finely diced

2 cloves garlic, minced

1 tbsp olive oil

½ tsp salt

¼ tsp black pepper

¼ tsp dried oregano

For the Pastry:

1 sheet puff pastry, thawed

1 egg, beaten (for egg wash)

1 tbsp sesame seeds (optional)

Instructions

Preheat your oven to 400°F (200°C) and line a baking sheet with parchment paper.

Heat the olive oil in a skillet over medium heat. Sauté the onion until soft and translucent, about 3–4 minutes.

Add the garlic and spinach, cooking until the spinach wilts. Remove from heat and allow the mixture to cool slightly.

Stir in the feta cheese, mozzarella, salt, pepper, and oregano until well combined.

Roll out the puff pastry and cut it into equal squares or rectangles.

Place a spoonful of the spinach filling in the center of each pastry piece.

Fold the pastry over the filling to form pockets or triangles. Press the edges firmly with a fork to seal.

Arrange the pastries on the prepared baking sheet. Brush the tops with beaten egg and sprinkle with sesame seeds if desired.

Bake for 18–22 minutes, or until beautifully golden and puffed.

Let cool for a few minutes before serving.

Serving Suggestions

Serve warm with a side of Greek yogurt or tzatziki sauce.

Pair with a fresh garden salad for a satisfying lunch.

Enjoy as a savory brunch addition or party appetizer.

Tips for Success

✔ Squeeze excess moisture from the spinach to prevent soggy pastry.

✔ Add chopped herbs like parsley or dill for extra freshness.

✔ Try ricotta cheese for an even creamier filling.

A Bite of Flaky Perfection!
