For the Pea Topping
1½ cups fresh or frozen peas, cooked and cooled
1 tbsp olive oil
1 tbsp fresh lemon juice
1 tsp lemon zest
Salt and black pepper, to taste
For Assembly
8 oz (225 g) burrata cheese
1–2 tbsp honey
Extra lemon zest for garnish
Fresh mint leaves or microgreens (optional)
Flaky sea salt, for finishing
Instructions
1. Toast the Crostini
Preheat the oven to 400°F (200°C). Arrange the baguette slices on a baking sheet and brush both sides lightly with olive oil. Bake for 8–10 minutes, turning halfway through, until crisp and golden.
2. Prepare the Pea Mixture
In a bowl, lightly mash the peas with olive oil, lemon juice, lemon zest, salt, and pepper. Leave some peas whole for added texture.
3. Assemble the Crostini
Spread a generous spoonful of the pea mixture onto each toasted baguette slice. Tear the burrata into pieces and place it over the peas.
4. Finish and Garnish
Drizzle each crostini with honey, then sprinkle with fresh lemon zest and a pinch of flaky sea salt. Garnish with mint leaves or microgreens if desired.
