Ingredients:

4 pork chops (bone-in or boneless)

1 large onion, thinly sliced

1 can (14–15 oz / 400g) diced or crushed tomatoes

Salt and black pepper, to taste

Instructions:

Preheat the oven: Set your oven to 160°C (325°F).

Layer the base: Spread the sliced onions evenly in the bottom of a baking dish.

Add the pork chops: Season the pork chops with salt and pepper, then place them over the onions.

Pour the tomatoes: Evenly pour the canned tomatoes over the pork chops, making sure everything is well covered.

Bake low and slow: Cover the dish with foil and bake for 1½ to 2 hours, until the pork is tender and the sauce has thickened.

Finish (optional): Remove the foil during the last 15 minutes for a slightly richer, more concentrated sauce.
