Slow Cooker 4-Ingredient Pinto Beans and Bacon

A simple, hearty dish made with pantry staples. As it cooks slowly, the beans become tender and release their starch into the broth while the bacon renders its smoky flavor. The result is a rich, savory pot of comfort food that’s perfect for feeding the whole family.

 

 

 

 

Ingredients (Serves about 6)

1 pound dried pinto beans, rinsed and picked over

8 ounces thick-cut bacon, chopped

1 medium yellow onion, diced

2 teaspoons seasoned salt (such as Lawry’s)

7 cups water

 

 

 

Instructions

1. Prepare the Beans

Place the dried pinto beans in a colander.

Rinse them under cool running water.

Pick out any broken beans or small stones.

No soaking is required for this slow cooker method.

2. Add Beans to Slow Cooker

Pour the rinsed beans into a 5- to 7-quart slow cooker.

Spread them into an even layer.

3. Add the Bacon

Scatter the chopped bacon evenly over the beans.

There’s no need to cook it first—the slow cooker will slowly render the bacon fat, giving the broth a deep savory flavor.

4. Add Onion and Seasoning

Sprinkle the diced onion over the beans and bacon.

Add the seasoned salt, distributing it evenly.

5. Add Water

Pour in 7 cups of water.

Stir gently once so everything is combined and the beans are fully submerged.

The liquid should cover the beans by about 1–2 inches.

6. Cook

Cover and cook:

LOW: 8–10 hours

HIGH: 4–5 hours

The beans are ready when they are very tender and the broth becomes thick and slightly creamy from the bean starch.

7. Stir and Taste

During the last hour, stir once or twice if possible.

Taste the broth and add a little more seasoned salt if needed.

8. Finish and Serve

Skim excess fat from the surface if desired, or stir it in for richer flavor.

Stir everything well so the beans, bacon, and broth are evenly mixed.

Ladle into bowls and serve hot.
