Keto Cracker Barrel–Style Meatloaf (Low-Carb Comfort Classic)
This keto-friendly meatloaf brings all the cozy, homestyle flavors of the famous diner-style version—rich, juicy, and topped with a savory glaze—without the extra carbs. Perfect for a satisfying family dinner while staying low-carb.
Ingredients
For the meatloaf:
1 kg (2 lbs) ground beef (80/20 for best flavor and moisture)
1 small onion, finely diced
2 cloves garlic, minced
2 large eggs
1/2 cup almond flour (keto-friendly binder)
1/3 cup heavy cream
1 tbsp Worcestershire sauce (check for low sugar)
1 tsp salt
1/2 tsp black pepper
1 tsp paprika
1 tsp dried thyme
For the glaze:
1/3 cup sugar-free ketchup
1 tbsp mustard
1 tbsp apple cider vinegar
1 tbsp erythritol or keto sweetener (optional, for balance)
Instructions
Preheat oven to 180°C (350°F). Lightly grease a loaf pan or line a baking sheet.
In a large bowl, combine ground beef, onion, garlic, eggs, almond flour, heavy cream, Worcestershire sauce, salt, pepper, paprika, and thyme.
Mix gently until just combined—avoid overmixing to keep the meatloaf tender.
Shape the mixture into a loaf and place it in the pan.
Bake for 40–45 minutes.
Meanwhile, mix all glaze ingredients in a small bowl.
Remove meatloaf from oven, spread glaze evenly on top.
Return to oven and bake for another 10–15 minutes until caramelized and cooked through.
Let rest for 10 minutes before slicing.
Serving Idea
Serve with mashed cauliflower, sautéed green beans, or a fresh keto salad for a complete low-carb meal.
