Healthy Oatmeal Apple & Carrot Breakfast Bake

Ingredients
2 cups (200 g) rolled oats, blended into a coarse flour
1 teaspoon baking powder
1 cup (240 ml) milk of your choice
1 medium carrot, finely grated
1 apple, peeled and grated
9 dried apricots, chopped
4 tablespoons raisins
2 eggs
1 teaspoon vanilla extract
1 teaspoon cinnamon
A pinch of salt
Optional: chopped walnuts or almonds for extra crunch
Instructions
Preheat your oven to 350°F (180°C). Grease or line a small baking dish or loaf pan.
In a large bowl, combine the blended oats, baking powder, cinnamon, and salt.
Add the milk, eggs, vanilla extract, grated carrot, grated apple, chopped apricots, and raisins. Stir until everything is well combined.
Let the mixture rest for 5 minutes so the oats can absorb some of the liquid.
Pour the batter into the prepared baking dish and smooth the top. Sprinkle nuts on top if desired.
Bake for 35–40 minutes, or until golden brown and firm in the center.
Allow to cool slightly before slicing and serving.
