Introduction

Warm, rich, and deeply comforting, this Rustic Slow-Simmered Beef & Potato Stew is the kind of homemade meal that brings everyone to the table. Tender chunks of beef are slowly cooked in a savory broth with hearty potatoes, sweet green peas, and aromatic herbs for a cozy dish that tastes even better with every bite. Perfect for chilly evenings, family dinners, or whenever you crave classic comfort food.

Ingredients

2 lbs (900 g) beef stew meat, cut into bite-sized cubes

4 medium potatoes, peeled and cut into chunks

1 cup green peas

1 medium onion, finely chopped

3 garlic cloves, minced

3 tablespoons tomato paste

4 cups beef broth

2 tablespoons olive oil

1 teaspoon paprika

1 teaspoon dried thyme

1 teaspoon salt

½ teaspoon black pepper

½ teaspoon cumin

2 tablespoons fresh parsley, chopped

1 tablespoon flour (optional, for a thicker stew)

Instructions

1. Brown the Beef

Heat olive oil in a large heavy pot over medium-high heat. Add the beef cubes and sear for 5–7 minutes until beautifully browned on all sides. Cook in batches if needed for the best color and flavor.

2. Build the Flavor Base

Add the chopped onion and sauté for about 3 minutes until soft and translucent. Stir in the minced garlic and cook for 30 seconds until fragrant.

3. Season the Stew

Mix in the tomato paste, paprika, thyme, cumin, salt, and black pepper. Stir thoroughly so the beef is evenly coated with the rich seasoning blend.

4. Slow Simmer

Pour in the beef broth and bring everything to a gentle boil. Reduce the heat to low, cover, and let the stew simmer for about 1 hour, or until the beef becomes tender and flavorful.

5. Add the Potatoes

Stir in the potato chunks and continue cooking for 20–25 minutes until the potatoes are soft and perfectly cooked.

6. Finish the Stew

Add the green peas during the final 5 minutes of cooking. For a thicker stew, whisk the flour with a little water and stir it into the pot until the broth thickens slightly.

7. Garnish & Serve

Taste and adjust the seasoning if needed. Sprinkle fresh parsley over the top and serve hot with crusty bread or warm dinner rolls.
