Ingredients:
6 large potatoes, thinly sliced
1 small onion, sliced
2 cups shredded cheddar cheese
1 can cream of mushroom or cream of chicken soup
1 cup milk
1 cup heavy cream
2 tablespoons butter
2 cloves garlic, minced
Salt and black pepper to taste
Optional: chopped parsley or crispy bacon for topping
Instructions:
Lightly grease your slow cooker.
Layer half of the sliced potatoes and onions inside the cooker.
In a bowl, mix soup, milk, heavy cream, garlic, salt, pepper, and half the cheese.
Pour half the sauce over the potatoes. Repeat layers with remaining potatoes and sauce.
Dot the top with butter.
Cover and cook on LOW for 6–7 hours or HIGH for 3–4 hours, until potatoes are soft and creamy.
Sprinkle remaining cheese on top during the last 20 minutes of cooking.
Garnish with parsley or crispy bacon and serve warm
