Smoky Bacon Pinto Beans with Fresh Salsa Topping

Smoky Bacon Pinto Beans with Fresh Salsa Topping

There’s nothing quite like a warm pot of slow-simmered pinto beans filling the kitchen with comforting aromas. This classic dish transforms humble ingredients into a rich, hearty meal that’s packed with flavor. Tender pinto beans are cooked low and slow until perfectly creamy, then enriched with smoky bacon, sweet onions, juicy tomatoes, and a touch of jalapeño for just the right amount of heat.

Finished with fresh cilantro and served piping hot, these beans are the ultimate comfort food—perfect as a main dish, a hearty side, or the centerpiece of a cozy family meal.

Ingredients

1 pound dried pinto beans

6 cups water, plus more for soaking

1 tablespoon salt, or to taste

6 slices bacon, chopped

1/2 cup white onion, diced

2 Roma tomatoes, diced

1 to 2 jalapeños, diced

1/4 cup fresh cilantro, chopped (optional)

Optional Toppings

Diced avocado

Crumbled queso fresco

Extra chopped cilantro

Lime wedges

Sliced radishes

Warm flour or corn tortillas

Instructions

Rinse the pinto beans thoroughly under cold running water, discarding any debris or damaged beans.

Place the beans in a large bowl and cover with several inches of water. Soak for at least 1 hour, or overnight for the best texture.

Drain the soaked beans and transfer them to a large pot. Add 6 cups of fresh water and the salt.

Bring to a boil over medium-high heat, then reduce the heat to low. Simmer gently for 1 1/2 to 2 hours, stirring occasionally, until the beans begin to soften.

Meanwhile, in a large skillet over medium heat, cook the chopped bacon until it starts to crisp and releases its flavorful fat.

Add the diced onion, tomatoes, and jalapeños to the skillet. Cook for 5 to 7 minutes, stirring often, until softened and fragrant.

Pour the entire bacon mixture, including all the rendered drippings, into the pot of beans. Stir well to combine.

Continue simmering for an additional 1 to 2 hours, or until the beans are tender and the broth has thickened to a rich, velvety consistency.

Taste and adjust the seasoning with additional salt if needed.

Stir in the chopped cilantro just before serving, if desired.

Serving Suggestions

Serve these smoky pinto beans in bowls topped with avocado, queso fresco, and a squeeze of fresh lime. They’re delicious alongside grilled meats, spooned over rice, or enjoyed with warm tortillas for dipping.

Tips for the Best Pinto Beans

For extra depth of flavor, add a bay leaf while the beans simmer.

If the liquid reduces too much during cooking, simply add a little hot water as needed.

Leftovers taste even better the next day as the flavors continue to develop.

Rich, smoky, and deeply satisfying, this comforting pot of pinto beans is a timeless recipe you’ll want to make again and again.
