2 large potatoes (about 500g), boiled and mashed

1 egg
For coating:
½ cup all-purpose flour
2 eggs, beaten
1 cup breadcrumbs
Vegetable oil, for frying
Instructions
In a large mixing bowl, combine the mashed potatoes, ham, shredded cheese, herbs, garlic powder, salt, pepper, and one egg. Mix until everything is well incorporated and the mixture holds together. If it feels too soft, chill it in the fridge for 20–30 minutes.
Scoop portions of the mixture (about 2 tablespoons each) and shape into small oval or log-like croquettes.
Prepare three bowls: one with flour, one with beaten eggs, and one with breadcrumbs. Coat each croquette by rolling it first in flour, then dipping it in egg, and finally covering it evenly with breadcrumbs.
Heat vegetable oil in a deep pan over medium heat. Fry the croquettes in batches for 3–4 minutes per side, until they turn deep golden brown and crispy.
Remove and drain on paper towels to keep them light and crunchy.
