Spicy Jalapeño Popper Soup with Grilled Cheese Dippers
Creamy, cheesy, and just the right amount of spicy, this Jalapeño Popper Soup tastes like your favorite appetizer turned into a comforting bowl of goodness. Paired with crispy grilled cheese dippers, it’s the ultimate comfort meal.
Ingredients
For the Soup
- 1 tablespoon olive oil
- 1 medium onion, diced
- 3 cloves garlic, minced
- 4 cups chicken or vegetable broth
- 2 cups cream cheese, softened and cubed
- 1 cup shredded cheddar cheese
- 1 cup diced jalapeños (fresh or pickled, adjust to taste)
- 1 teaspoon smoked paprika
- ½ teaspoon salt (or to taste)
- ½ teaspoon black pepper
- 1 cup heavy cream or whole milk
- Optional garnish: chopped green onions, extra cheese, or crispy tortilla strips
For the Grilled Cheese Dippers
- Sandwich bread (any kind you like)
- Butter, softened
- Sliced or shredded melty cheese (cheddar, mozzarella, or American)
Instructions
Make the Soup
- Sauté the Aromatics
Heat olive oil in a large pot over medium heat.
Add diced onion and cook for 4–5 minutes until soft and translucent.
Stir in garlic and cook for 30 seconds until fragrant. - Add Broth & Flavor
Pour in the broth and bring to a gentle simmer.
Stir in jalapeños, smoked paprika, salt, and black pepper. - Make It Creamy
Reduce heat to low.
Add cream cheese and stir until fully melted and smooth.
Pour in the heavy cream (or milk) and stir well. - Add Cheese
Stir in shredded cheddar cheese until melted and creamy.
Simmer gently for 5–10 minutes, stirring occasionally.
Taste and adjust seasoning if needed.
Make the Grilled Cheese Dippers
- Butter one side of each slice of bread.
- Place cheese between two slices (butter side out).
- Cook in a skillet over medium heat until golden brown on both sides and cheese is melted.
- Cut sandwiches into strips for dipping.
Serve
Ladle hot soup into bowls and serve with grilled cheese dippers on the side—or right in the soup for dunking.
