Sizzling Scallops with a Bright Lime–Cilantro Sauce
Ingredients
- 1 lb sea scallops, thoroughly patted dry
- 2 tbsp olive oil
- 1 tbsp butter
- Salt and pepper, to taste
- 1/4 cup fresh lime juice
- 1 tbsp lime zest
- 1/4 cup fresh cilantro, chopped
- 2 garlic cloves, minced
Instructions
- Season the Scallops
Dry the scallops well with paper towels, then season both sides with salt and pepper. - Sear the Scallops
Heat the olive oil in a large skillet over medium-high heat. When the oil is hot and shimmering, place the scallops in the pan in a single layer.
Sear for about 2 minutes per side, until a deep golden crust forms. Avoid crowding the pan to ensure proper browning. - Remove and Hold
Transfer the scallops to a warm plate and set aside. - Make the Sauce
Reduce the heat to medium. Add the butter and minced garlic to the same skillet and cook for about 30 seconds, just until fragrant.
Pour in the lime juice and add the lime zest, scraping up the browned bits from the bottom of the pan. - Finish the Dish
Return the scallops to the skillet and spoon the citrus-garlic butter sauce over them. - Serve
Take the pan off the heat and garnish with fresh cilantro before serving.
