Ingredients
Filling
2 cups cooked chicken (shredded or diced)
1 cup mixed vegetables (carrots, peas, corn, green beans)
2 tbsp butter
2 tbsp all-purpose flour
1 cup chicken broth
½ cup milk or cream
1 small onion (finely chopped)
2 cloves garlic (minced)
1 tsp dried thyme
Salt & black pepper to taste
Dough
2 sheets puff pastry (thawed)
(or homemade pie dough if preferred)
Egg Wash
1 egg
1 tbsp water
Instructions
1️⃣ Prepare the Filling
Melt butter in a pan over medium heat.
Add chopped onion and cook until soft (about 3–4 minutes).
Stir in garlic and cook for 30 seconds.
Sprinkle flour over the mixture and stir well (this forms a roux).
Slowly add chicken broth while stirring to avoid lumps.
Pour in milk or cream and cook until the sauce thickens.
Add chicken, mixed vegetables, thyme, salt, and pepper.
Simmer for 3–5 minutes until everything is well combined.
Remove from heat and let cool completely.
2️⃣ Assemble the Hand Pies
Preheat oven to 200°C (400°F).
Roll out puff pastry and cut into rectangles or circles (about 10–12 pieces).
Place a spoonful of filling in the center of each piece.
Fold over to form a pocket.
Seal edges with a fork.
3️⃣ Bake
Place pies on a lined baking tray.
Mix egg and water, then brush over each pie.
Cut small slits on top to release steam.
Bake for 18–22 minutes, or until golden brown and flaky.
