Strawberry Pop-Tart Pie
Sweet, flaky, and bursting with strawberry flavor—this pie is inspired by classic strawberry Pop-Tarts but baked into one irresistible dessert.
Ingredients
Pie Filling
5 cups fresh strawberries, hulled and diced (about 1½ pounds)
1 cup granulated sugar
4 tablespoons cornstarch
4 tablespoons fresh lemon juice
1 teaspoon vanilla extract
Crust
1 box (14.1 oz) refrigerated pie crusts, thawed (2 crusts, 9-inch each)
1 large egg, room temperature (for egg wash)
Glaze
1½ cups powdered sugar, sifted
2–2½ tablespoons whole milk
½ teaspoon vanilla extract
½ teaspoon rainbow sanding sugar sprinkles
Instructions
1. Preheat Oven
Preheat your oven to 375°F (190°C). Line a baking sheet with parchment paper and set aside.
2. Make the Strawberry Filling
In a large bowl, combine:
Diced strawberries
Granulated sugar
Cornstarch
Lemon juice
Vanilla extract
Stir gently until the strawberries are evenly coated. Set aside while you prepare the crust.
3. Prepare the Bottom Crust
Unroll one pie crust and place it on the prepared baking sheet. Gently roll it slightly larger if needed.
Spoon the strawberry filling into the center of the crust, spreading it evenly but leaving about a 1-inch border around the edges.
4. Top the Pie
Unroll the second pie crust and carefully place it over the filling.
Press the edges together and crimp with a fork to seal. Use a sharp knife to cut a few small slits in the top crust to allow steam to escape.
5. Egg Wash
In a small bowl, whisk the egg. Lightly brush the top of the pie with the egg wash for a golden finish.
6. Bake
Bake for 40–45 minutes, or until the crust is golden brown and the filling is bubbling.
If the crust browns too quickly, loosely cover the edges with foil during the last 10 minutes.
7. Cool
Remove from the oven and let the pie cool completely on a wire rack before glazing. This helps the filling set.
8. Make the Glaze
In a bowl, whisk together:
Powdered sugar
Milk (start with 2 tablespoons and add more as needed)
Vanilla extract
Mix until smooth and pourable but not too thin.
9. Glaze & Decorate
Drizzle the glaze generously over the cooled pie. Immediately sprinkle with rainbow sanding sugar for that classic Pop-Tart look.
