Elegant, creamy, and wonderfully indulgent, these Champagne Scalloped Oysters are the perfect appetizer for a special dinner or festive celebration. Fresh oysters are gently baked in a rich Champagne cream sauce until tender, golden, and irresistibly delicious. Every bite is briny, buttery, and kissed with a touch of sparkling sophistication.

Ingredients

12 fresh oysters, shucked, with liquor reserved

100 ml Champagne (or sparkling wine)

2 tablespoons thick sour cream

2 tablespoons unsalted butter

1 small shallot, finely minced

1 garlic clove, minced

3 tablespoons heavy cream

2 tablespoons grated Parmesan cheese

2 tablespoons fresh breadcrumbs

1 tablespoon chopped fresh parsley

1 teaspoon lemon juice

Salt and freshly ground black pepper, to taste

A pinch of paprika, for garnish

Rock salt or coarse sea salt, for serving (optional)

 

 

 

 

Instructions

Preheat your oven to 425°F (220°C). Arrange a layer of rock salt on a baking tray or prepare individual oyster shells for baking.

In a small saucepan, melt the butter over medium heat. Add the minced shallot and garlic, sautéing until soft and fragrant, about 2 minutes.

Pour in the Champagne and bring to a gentle simmer. Let it reduce by half, concentrating the flavors.

Stir in the sour cream, heavy cream, and lemon juice. Cook for 1–2 minutes until the sauce is smooth and slightly thickened. Season lightly with salt and freshly ground black pepper.

Place one oyster in each half shell. Spoon a small amount of the Champagne cream sauce over each oyster.

In a small bowl, combine the breadcrumbs, Parmesan cheese, and chopped parsley. Sprinkle this mixture evenly over the oysters.

Bake for 8–10 minutes, or until the topping is golden brown and the oysters are just cooked through.

Remove from the oven and garnish with a light dusting of paprika and an extra sprinkle of fresh parsley.

Serving Suggestions

Serve immediately with lemon wedges and a chilled glass of Champagne. These oysters pair beautifully with a crisp green salad or as a luxurious starter for a seafood feast.
