Eggplant Parmigiana — A Taste of Legacy

Ingredients:

 

– 2 large eggplants (sliced & salted)

– 2 cups tomato basil sauce

– 2 cups shredded mozzarella

– ½ cup grated Parmesan

– 1 cup flour + 2 eggs + breadcrumbs

– Olive oil for frying

– Fresh basil leaves

 

 

 

Steps to Soulful Layers:

 

1. Slice eggplants, salt & rest (to release bitterness).

2. Dip in flour → egg → breadcrumbs. Fry till golden.

3. Layer: sauce → eggplant → mozzarella → Parmesan. Repeat.

4. Bake at 180°C (350°F) for 35–40 min.

5. Garnish with basil. Serve warm. Feel the love.
