Orange Muffins Recipe
Ingredients:
• 2 cups (250g) all-purpose flour
• ¾ cup (150g) sugar
• 2 teaspoons baking powder
• ¼ teaspoon salt
• ½ cup (120ml) vegetable oil or melted butter
• ¾ cup (180ml) fresh orange juice
• 2 tablespoons orange zest (grated orange peel)
• 2 large eggs
• 1 teaspoon vanilla extract
Instructions:
Preheat your oven to 180°C (350°F) and line a muffin pan with paper cups or grease lightly.
In a bowl, whisk together flour, sugar, baking powder, and salt. In another bowl, mix oil, orange juice, eggs, vanilla, and orange zest until smooth.
Pour the wet ingredients into the dry ingredients and stir gently until just combined — do not overmix. The batter should be slightly thick.
Scoop the batter into the muffin cups, filling each about ¾ full. Bake for 18–22 minutes or until golden and a toothpick inserted in the center comes
