Instructions

Preheat the Oven

Preheat your oven to 375°F (190°C).

Lightly grease a 9-inch pie dish or baking dish.

Prepare the Fruit Filling

In a large bowl, combine the sliced peaches, blueberries, sugar, lemon juice, and vanilla extract.

Add the cornstarch, cinnamon, nutmeg, and salt.

Gently toss until the fruit is evenly coated.

Transfer the mixture to the prepared baking dish.

Make the Cobbler Topping

In a medium bowl, whisk together the flour, sugar, baking powder, salt, and cinnamon.

Stir in the melted butter, milk, and vanilla extract until just combined. Do not overmix.

Assemble the Cobbler Pie

Spoon the batter evenly over the fruit filling, leaving a few small gaps for the fruit to bubble through as it bakes.

Bake

Bake for 40–45 minutes, or until the topping is golden brown and the fruit filling is bubbling around the edges.

Cool and Serve

Allow the cobbler pie to cool for at least 15 minutes before serving.

Serve warm with a scoop of vanilla ice cream or a dollop of whipped cream.

Tips for the Best Cobbler Pie

If using frozen fruit, thaw and drain well before using.

For extra crunch, sprinkle the top with coarse sugar before baking.

A dash of almond extract can add a lovely depth of flavor.

This warm, fruity dessert is perfect for summer gatherings, family dinners, or anytime you’re craving a comforting homemade treat. One slice is never enough!
