Ingredients
1 medium apple (peeled if you like, thinly sliced)
2 large egg yolks
1 cup (240 ml) milk (whole milk gives the creamiest result)
2 tablespoons sugar (white or light brown)
1 teaspoon vanilla extract
Pinch of ground cinnamon
Pinch of ground nutmeg
Optional toppings: caramel sauce, extra cinnamon, powdered sugar
Instructions
Preheat the oven
Preheat your oven to 160°C (320°F).
Place two small ramekins in a deep baking dish.
Make the custard base
In a bowl, whisk together the egg yolks and sugar until slightly pale.
Slowly whisk in the milk and vanilla until smooth and well combined.
Avoid whipping too much to prevent bubbles.
Prepare the apples
Thinly slice the apple. You can lightly toss the slices with a pinch of cinnamon if desired.
Assemble
Pour the custard mixture evenly into the ramekins.
Gently place the apple slices on top.
Sprinkle lightly with cinnamon and nutmeg.
Water bath (important!)
Carefully pour hot water into the baking dish until it reaches halfway up the sides of the ramekins.
This keeps the custard silky and prevents curdling.
Bake
Bake for 30–35 minutes, until the custard is set around the edges but still slightly jiggly in the center.
Finish & serve
Remove from the oven and water bath.
Let rest for 5 minutes, then drizzle with caramel sauce if using.
Serve warm and enjoy slowly
