3 to 3½ pounds corned beef brisket (discard the spice packet)
2 large yellow or white onions, thinly sliced
8–10 garlic cloves, minced (about 3 tablespoons)
1½ cups low-sodium beef broth or water
Directions
1. Prepare the slow cooker
Lightly grease the slow cooker insert or use a liner for easy cleanup.
2. Create the onion base
Spread the sliced onions evenly across the bottom of the slow cooker. This layer adds flavor and prevents the meat from sticking.
3. Add the corned beef
Place the corned beef brisket on top of the onions, fat side up if possible. The fat slowly melts into the meat as it cooks, adding flavor.
4. Add garlic and broth
Sprinkle the minced garlic over the brisket. Pour the beef broth (or water) around the sides of the meat so the garlic stays on top.
5. Slow cook
Cover and cook:
Low: 8–9 hours (best for very tender meat)
High: 4–5 hours
The corned beef is ready when it’s fork-tender and easy to slice.
6. Rest and slice
