Ingredients

 

– 8 large eggs

– ¼ cup milk

– 1 cup shredded cheddar cheese

– ½ cup bell peppers, finely diced (any color)

– ½ cup broccoli florets, finely chopped

– ¼ cup grated carrot

– ¼ cup spinach, finely chopped

– 2 green onions, sliced

– ½ teaspoon garlic powder

– ½ teaspoon onion powder

– Salt and black pepper, to taste

– Cooking spray or a little butter for greasing the muffin pan

 

 

 

 

Instructions

 

1. Preheat your oven to 375°F (190°C) and lightly grease a 12-cup muffin tin.

2. In a large bowl, whisk together the eggs, milk, garlic powder, onion powder, salt, and pepper until smooth.

3. Stir in the shredded cheese, bell peppers, broccoli, carrots, spinach, and green onions.

4. Divide the egg mixture evenly among the prepared muffin cups, filling each about ¾ full.

5. Bake for 20–25 minutes, or until the muffins are puffed up and the centers are fully set.

6. Let them cool for 5 minutes before carefully removing from the pan.

7. Serve warm, or refrigerate leftovers in an airtight container for up to 4 days. Reheat in the microwave for 20–30 seconds before serving.
