Ingredients
6 bone-in, skin-on chicken thighs (or boneless if preferred)
2 large yellow onions, thinly sliced
2 tablespoons olive oil
2 tablespoons butter
2 cloves garlic, minced
1 cup beef broth (or chicken broth)
1 tablespoon Worcestershire sauce
1 teaspoon dried thyme
½ teaspoon salt
½ teaspoon black pepper
1 tablespoon all-purpose flour (optional, for a thicker gravy)
1 cup shredded Gruyère, Swiss, or mozzarella cheese (optional)
Fresh parsley, chopped, for garnish
Instructions
Preheat your oven to 400°F (200°C).
Season the chicken thighs with salt, pepper, and thyme.
Heat olive oil in a large oven-safe skillet over medium-high heat. Sear the chicken thighs skin-side down for 4–5 minutes until golden brown. Flip and cook for another 2 minutes. Remove and set aside.
In the same skillet, melt the butter and add the sliced onions. Cook over medium heat for 15–20 minutes, stirring occasionally, until deeply caramelized and golden.
Stir in the garlic and cook for 1 minute until fragrant.
Sprinkle the flour over the onions if using, stirring well. Pour in the broth and Worcestershire sauce, scraping up any browned bits from the bottom of the pan.
Return the chicken thighs to the skillet, nestling them into the onion mixture.
Transfer to the oven and bake for 25–30 minutes, or until the chicken is fully cooked and tender.
If using cheese, sprinkle it over the chicken during the last 5 minutes of baking and return to the oven until melted and bubbly.
