Ingredients
4 egg yolks
120 g (4.2 oz) sugar
200 ml milk, plus 1 tablespoon
420 ml heavy cream (33–36% fat)
30 g (1 oz) chocolate, finely chopped
Instructions
In a medium bowl, whisk the egg yolks and sugar until the mixture becomes pale and creamy.
Pour the milk into a saucepan and heat over medium heat until warm but not boiling.
Slowly pour the warm milk into the egg mixture while whisking continuously to prevent the eggs from curdling.
Return the mixture to the saucepan and cook over low heat, stirring constantly, until it thickens slightly and coats the back of a spoon.
Remove from the heat and add the chopped chocolate. Stir until completely melted and smooth.
Let the mixture cool to room temperature, then refrigerate for at least 2 hours or until thoroughly chilled.
In a separate bowl, whip the heavy cream until soft peaks form.
Gently fold the chilled chocolate custard into the whipped cream until fully combined.
Transfer the mixture to a freezer-safe container and smooth the top.
Freeze for 4–6 hours, stirring once or twice during the first few hours for an extra creamy texture.
