Ingredients
6 bone-in, skin-on chicken thighs (or boneless if preferred)
1 medium green cabbage, cut into wedges or thick slices
1 medium onion, sliced
3 cloves garlic, minced
2 tablespoons butter, cut into pieces
1 cup chicken broth
1 tablespoon olive oil
1 teaspoon paprika
1 teaspoon dried thyme
1 teaspoon salt
½ teaspoon black pepper
½ teaspoon onion powder
½ teaspoon garlic powder
Fresh parsley, chopped (for garnish)
Instructions
Lightly grease the slow cooker with cooking spray or a little olive oil.
Arrange the cabbage and sliced onion in the bottom of the slow cooker. Sprinkle with minced garlic.
Drizzle the olive oil over the chicken thighs and season them with paprika, thyme, salt, pepper, onion powder, and garlic powder.
Place the seasoned chicken thighs on top of the cabbage.
Pour the chicken broth around the sides and dot the cabbage with pieces of butter.
Cover and cook on LOW for 6–7 hours or HIGH for 3–4 hours, until the chicken is tender and fully cooked and the cabbage is soft and flavorful.
For crispier chicken skin, transfer the cooked thighs to a baking sheet and broil for 3–5 minutes before serving.
Garnish with fresh parsley and serve hot with the cabbage and cooking juices spooned over the top.
