6 bone-in, skin-on chicken thighs (or boneless thighs)
2 large yellow onions, thinly sliced
3 cloves garlic, minced
2 tbsp butter
1 tbsp olive oil
1 cup chicken broth
1 cup heavy cream
½ cup sour cream
1 cup shredded mozzarella cheese
½ cup grated Parmesan cheese
1 tsp onion powder
1 tsp garlic powder
1 tsp dried thyme
½ tsp paprika
Salt and black pepper, to taste
Fresh parsley, chopped (for garnish)
Instructions
Preheat your oven to 375°F (190°C).
Season the chicken with salt, pepper, onion powder, garlic powder, paprika, and thyme.
Heat the butter and olive oil in a large skillet over medium heat. Add the onions and cook for 15–20 minutes, stirring often, until deeply golden and caramelized. Stir in the garlic and cook for 1 minute.
