Ingredients
2 lbs (900 g) beef sirloin or flank steak, thinly sliced
3 bell peppers (red, green, and yellow), sliced
1 large onion, sliced
4 cloves garlic, minced
1½ cups beef broth
¼ cup low-sodium soy sauce
2 tbsp Worcestershire sauce
2 tbsp tomato paste
1 tbsp brown sugar
1 tsp smoked paprika
1 tsp onion powder
½ tsp black pepper
½ tsp crushed red pepper flakes (optional)
2 tbsp cornstarch
2 tbsp cold water
Fresh parsley or sliced green onions, for garnish
Instructions
Place the sliced beef in the slow cooker.
Add the bell peppers, onion, and garlic over the beef.
In a bowl, whisk together the beef broth, soy sauce, Worcestershire sauce, tomato paste, brown sugar, smoked paprika, onion powder, black pepper, and red pepper flakes.
Pour the sauce over the beef and vegetables, stirring gently to coat everything evenly.
Cover and cook on LOW for 6–8 hours or HIGH for 3–4 hours, until the beef is fork-tender.
In a small bowl, mix the cornstarch with the cold water to create a slurry. Stir it into the slow cooker during the last 20–30 minutes of cooking, then cover and allow the sauce to thicken.
Taste and adjust seasoning if needed.
Garnish with fresh parsley or sliced green onions and serve hot over rice, noodles, or mashed potatoes.
