Ingredients

Cookie Layer

 

12 Biscoff cookies

 

180 ml strong espresso, cooled

 

1 tsp vanilla extract

 

Whipped Yogurt Cream

 

500 g full-fat Greek yogurt

 

250 g mascarpone cheese

 

80 g powdered sugar

 

1 tsp vanilla extract

 

200 ml heavy whipping cream

 

 

 

Topping

 

Unsweetened cocoa powder

 

Dark chocolate shavings

 

Extra Biscoff cookies

The rich aroma of espresso and cocoa mingles with creamy vanilla yogurt, creating a dessert that’s both nostalgic and refreshingly light.

 

Instructions

 

1️⃣ Brew the espresso and allow it to cool completely.

 

2️⃣ Whip the heavy cream until soft peaks form.

 

3️⃣ Beat together the Greek yogurt, mascarpone, powdered sugar, and vanilla until smooth.

 

4️⃣ Fold the whipped cream into the yogurt mixture.

 

5️⃣ Quickly dip each Biscoff cookie into the cooled espresso.

 

6️⃣ Break the cookies into pieces and place them in the bottom of each serving glass.

 

7️⃣ Pipe or spoon a layer of yogurt cream over the cookies.
