Ingredients

2 cups (480 ml) heavy whipping cream

1 cup (240 ml) unsweetened almond milk

1/3 cup powdered erythritol or your favorite keto sweetener

2 teaspoons vanilla extract

Pinch of salt

Optional:

1 teaspoon xanthan gum (for an extra creamy texture)

 

 

 

Instructions

In a large mixing bowl, whisk together the heavy cream, almond milk, sweetener, vanilla extract, and salt until the sweetener dissolves.

If using xanthan gum, sprinkle it in while whisking to prevent lumps.

Pour the mixture into an ice cream maker and churn according to the manufacturer’s instructions.

Transfer to a freezer-safe container and freeze for 4–6 hours until firm.

Let the ice cream sit at room temperature for 5–10 minutes before scooping. Serve and enjoy!

Add sugar-free chocolate chips or chopped toasted pecans for extra flavor.

Store in an airtight container in the freezer for up to 2 weeks.
