Ultimate Slow Cooker Pepper Steak with Garlic Soy Gravy

Tender strips of beef are slow-cooked to perfection in a rich, savory garlic soy sauce with sweet bell peppers and onions. This comforting crockpot favorite is an effortless, dump-and-go meal that’s bursting with bold flavor and perfect for busy weeknights. Serve it over fluffy rice, buttery mashed potatoes, or egg noodles for a hearty dinner the whole family will love!

Ingredients

2 lbs (900 g) beef sirloin or flank steak, thinly sliced

1 green bell pepper, sliced

1 red bell pepper, sliced

1 medium onion, sliced

4 garlic cloves, minced

1 cup beef broth

½ cup low-sodium soy sauce

2 tablespoons Worcestershire sauce

2 tablespoons brown sugar

1 teaspoon ground ginger

1 teaspoon black pepper

1 tablespoon sesame oil (optional, for extra flavor)

2 tablespoons cornstarch

2 tablespoons cold water

Optional Garnishes

Sliced green onions

Sesame seeds

Fresh chopped parsley

 

 

 

Instructions

Place the sliced beef into the slow cooker.

Add the sliced bell peppers, onion, and minced garlic.

In a medium bowl, whisk together the beef broth, soy sauce, Worcestershire sauce, brown sugar, ginger, black pepper, and sesame oil (if using).

Pour the sauce evenly over the beef and vegetables.

Cover and cook on Low for 6–7 hours or High for 3–4 hours, until the beef is melt-in-your-mouth tender.

In a small bowl, stir together the cornstarch and cold water until smooth.

About 20–30 minutes before serving, stir the slurry into the slow cooker. Cover and continue cooking until the sauce becomes thick and glossy.

Taste and adjust seasoning if needed.

Spoon over steamed white rice, jasmine rice, mashed potatoes, or buttered egg noodles, and garnish with green onions and sesame seeds.

Add sliced mushrooms for extra richness.
