Ingredients

3–4 lb sirloin roast

8–10 slices thick-cut bacon

1 tablespoon olive oil

2 teaspoons garlic powder

2 teaspoons onion powder

1 teaspoon smoked paprika

1 teaspoon dried thyme

1 teaspoon dried rosemary

1 teaspoon kosher salt

½ teaspoon black pepper

1 tablespoon Worcestershire sauce

1 cup beef broth

1 tablespoon Dijon mustard (optional)

1 pound baby potatoes

4 large carrots, peeled and cut into chunks

1 large onion, cut into wedges

3 cloves garlic, minced

Fresh parsley, chopped (for garnish)

 

 

 

 

Instructions

Pat the sirloin roast dry with paper towels.

In a small bowl, combine the garlic powder, onion powder, smoked paprika, thyme, rosemary, salt, and pepper. Rub the seasoning mixture all over the roast.

Wrap the bacon slices around the roast, slightly overlapping each slice. Secure with kitchen twine or toothpicks if needed.

Heat the olive oil in a large skillet over medium-high heat. Sear the bacon-wrapped roast for 2–3 minutes per side until lightly browned.

Place the potatoes, carrots, onion, and garlic in the bottom of the slow cooker.

Set the roast on top of the vegetables.

Whisk together the beef broth, Worcestershire sauce, and Dijon mustard, then pour the mixture around the roast.

Cover and cook on LOW for 8 hours or HIGH for 4–5 hours, until the roast is tender and easily slices with a fork.

Carefully transfer the roast to a cutting board and let it rest for 10 minutes before slicing.

Serve with the vegetables and spoon the flavorful cooking juices over the top. Garnish with fresh parsley.

For extra crispy bacon, place the cooked roast under the broiler for 3–5 minutes before serving.

Add mushrooms or celery for even more flavor.
