Slow Cooker Smothered Beef with Rich Onion Gravy – A Budget-Friendly Comfort Classic

Tender, slow-cooked beef simmered in a rich, savory onion gravy until it melts apart with every bite. Made with just four simple ingredients, this old-fashioned comfort meal proves that the most satisfying dinners often come from the simplest recipes. Perfect for cozy family suppers and easy enough for any day of the week!

Servings: 6

You’ll Need:

2½–3 lb (1.1–1.4 kg) beef chuck roast

1 packet (1 oz) onion soup mix

1 can (10.5 oz) condensed cream of mushroom soup

1 cup low-sodium beef broth

Instructions:

Place the beef chuck roast in the bottom of your slow cooker.

In a bowl, whisk together the onion soup mix, cream of mushroom soup, and beef broth until smooth.

Pour the mixture evenly over the beef, coating it completely.

Cover and cook on LOW for 8–9 hours or HIGH for 4–5 hours, until the beef is fork-tender and easily shreds.

Remove the beef and shred it into large pieces using two forks.

Return the shredded beef to the slow cooker and stir it into the rich onion gravy.

Let it cook for another 10–15 minutes before serving.

Serving Suggestions:

Serve this comforting smothered beef over fluffy mashed potatoes, buttered egg noodles, steamed white rice, or baked potatoes. Pair it with green beans, peas, roasted carrots, or warm biscuits to soak up every drop of the delicious onion gravy.

Tips:

Sear the roast for 2–3 minutes per side before slow cooking for even deeper flavor.

Add sliced mushrooms or onions for extra richness.

If you’d like a thicker gravy, stir in a cornstarch slurry (1 tablespoon cornstarch mixed with 2 tablespoons cold water) during the last 20 minutes of cooking.

Store leftovers in the refrigerator for up to 4 days or freeze for up to 3 months.
