Grandma’s Secret Easter Wedding Soup Pasta Bake

Grandma’s Secret Easter Wedding Soup Pasta Bake

A cozy, cheesy, four-ingredient casserole inspired by classic Italian wedding soup—simple, hearty, and perfect for feeding a crowd.

Every Easter Sunday, my grandmother would pull a big white casserole dish from the oven, steam fogging up the kitchen windows as the whole house filled with the irresistible aroma of savory meatballs, tender pasta, and bubbling cheese.

We called it her “wedding soup pasta,” even though it never appeared at a wedding. It was a regular at church suppers, family gatherings, and holiday tables across the Midwest.

For years, Grandma kept the recipe entirely in her head. No recipe card. No measurements. Just a little of this, a little of that. Then, one spring afternoon, I finally stood beside her in the kitchen and discovered her secret: keep it simple, don’t skimp on the meatballs, and let the oven do the work.

This easy four-ingredient bake is exactly the kind of comforting, no-fuss meal she loved to make. Humble ingredients come together to create a hearty casserole that tastes like a warm Sunday afternoon at Grandma’s house.

Ingredients

– 1 pound frozen Italian-style meatballs, thawed

– 12 ounces small pasta, such as ditalini, small shells, or elbow macaroni

– 4 cups chicken broth

– 2 cups shredded mozzarella cheese

Optional for serving:

– Fresh parsley, chopped

– Grated Parmesan cheese

– Cracked black pepper

Instructions

1. Preheat the oven to 375°F (190°C). Lightly grease a 9×13-inch baking dish.

2. Add the pasta and meatballs to the prepared baking dish, spreading everything into an even layer.

3. Pour the chicken broth evenly over the top. Gently stir to combine.

4. Cover the dish tightly with aluminum foil and bake for 35–40 minutes, or until the pasta is tender and most of the broth has been absorbed.

5. Remove the foil and sprinkle the shredded mozzarella evenly over the top.

6. Return the casserole to the oven, uncovered, and bake for another 8–10 minutes, until the cheese is melted, bubbly, and lightly golden.

7. Let it rest for 5–10 minutes before serving. Finish with fresh parsley, Parmesan, and a little black pepper, if desired.

Grandma’s Secret Tips

– Don’t overcrowd the dish. Use a pasta shape that cooks evenly and fits comfortably in the baking dish.

– Cover tightly while baking. This helps the pasta cook properly in the broth.

– Use plenty of meatballs. They are the heart of the dish, so don’t skimp.

– Let it rest before serving. The pasta will continue to absorb the flavorful broth as the casserole sits.

What to Serve with It

This hearty bake is practically a complete meal on its own, but it pairs beautifully with a simple green salad dressed with olive oil and red wine vinegar. Warm dinner rolls or buttery garlic toast are perfect for soaking up every last bit of flavor.

For a holiday gathering, serve it alongside roasted carrots or green beans. A refreshing glass of iced tea or a light white wine makes a lovely addition, while lemon bars or angel food cake topped with fresh berries create a simple, delicious dessert.

One bite, and you’ll understand why Grandma never needed a recipe card.
