Ingredients
14 oz (400 g) smoked beef or turkey sausage, sliced
2 cans (15 oz / 425 g each) red beans, drained and rinsed
1 medium onion, diced
3 cloves garlic, minced
1 green bell pepper, diced (optional)
2 cups beef or chicken broth
1 can (14.5 oz / 410 g) diced tomatoes, undrained
1 tbsp tomato paste
1 tsp smoked paprika
1 tsp Cajun seasoning
½ tsp dried thyme
½ tsp black pepper
1 bay leaf
1 tbsp Worcestershire sauce
Salt, to taste
Fresh parsley, chopped (for garnish)
Instructions
Add the sliced sausage, red beans, onion, garlic, bell pepper, diced tomatoes, tomato paste, broth, Worcestershire sauce, and all seasonings to your slow cooker.
Stir everything together until well combined.
Cover and cook on LOW for 6–8 hours or HIGH for 3–4 hours, allowing the flavors to blend beautifully.
Remove the bay leaf and taste, adjusting the seasoning if needed.
Garnish with fresh parsley before serving.
