Ingredients

 

– 2 bone-in ribeye steaks (about 1½–2 inches thick)

– 2 tbsp olive oil

– 2 tsp sea salt

– 1 tsp freshly ground black pepper

– 1 tsp garlic powder

– 3 tbsp unsalted butter

– 3 cloves garlic, smashed

– 2 sprigs fresh rosemary

– 2 sprigs fresh thyme

– 1 tbsp fresh parsley, chopped

 

 

 

 

 

Instructions

 

1. Prepare the steaks:

Remove the steaks from the refrigerator about 30–45 minutes before cooking to bring them closer to room temperature. Pat them dry with paper towels, then season generously with salt, black pepper, and garlic powder on both sides.

 

2. Sear for a perfect crust:

Heat a heavy skillet or cast-iron pan over high heat. Add olive oil, then place the steaks in the pan. Sear for 3–5 minutes per side until a deep golden-brown crust forms.

 

3. Create the herb butter finish:

Reduce the heat to medium. Add butter, garlic, rosemary, and thyme to the pan. Once the butter melts, spoon it repeatedly over the steaks for 1–2 minutes to infuse them with rich flavor.

 

4. Cook to your preferred doneness:

Continue cooking until the steak reaches your desired temperature:

 

– Medium rare: about 130–135°F (54–57°C)

– Medium: about 135–145°F (57–63°C)

 

5. Rest and serve:

Transfer the steaks to a plate and let them rest for 5–10 minutes. Sprinkle with fresh parsley, slice against the grain, and serve with your favorite sides.
