Tender Chicken Breast in a Rich Garlic Mushroom Cream

Ingredients:

4 boneless, skinless chicken breasts

Salt and pepper, to taste

1 tablespoon olive oil

2 tablespoons butter

1 onion, finely chopped

3 cloves garlic, minced

8 oz (225 g) mushrooms, sliced

1 cup (240 ml) heavy cream

½ cup (120 ml) chicken broth

½ teaspoon dried thyme (or 1 teaspoon fresh)

¼ cup grated Parmesan cheese (optional, for extra creaminess)

Fresh parsley, chopped (for garnish)

Instructions:

1. Prepare the Chicken:
Season the chicken breasts with salt and pepper on both sides.

2. Sear the Chicken:
Heat olive oil in a large skillet over medium-high heat. Add the chicken breasts and cook for 5–6 minutes per side, until golden brown and cooked through. Remove from the pan and set aside.

3. Make the Sauce Base:
In the same skillet, reduce heat to medium. Add butter and let it melt. Add the chopped onion and cook until soft and translucent, about 2–3 minutes.

4. Add Garlic and Mushrooms:
Stir in the minced garlic and sliced mushrooms. Sauté until the mushrooms are browned and any moisture has evaporated, about 5 minutes.

5. Create the Cream Sauce:
Pour in the chicken broth, scraping the bottom of the pan to deglaze. Add the heavy cream and thyme, stirring to combine. Bring to a gentle simmer and cook for 3–4 minutes until slightly thickened.

6. Add Cheese (Optional):
Stir in the Parmesan cheese for a richer, creamier texture.

7. Combine and Serve:
Return the chicken breasts to the skillet, spooning the sauce over them. Let simmer for another 2–3 minutes to absorb the flavors.

8. Garnish and Enjoy:
Sprinkle with chopped parsley before serving.
