Greek Chickpea and Avocado Salad with Lemon Feta Dressing

This Greek-inspired chickpea and avocado salad is vibrant, refreshing, and packed with Mediterranean flavors. It combines creamy avocado, juicy tomatoes, crisp cucumbers, and tangy feta—all brought together with a zesty lemon-feta dressing. Perfect as a light lunch, side dish, or meal prep option!

Ingredients

For the Salad:

1 can (15 oz) chickpeas, drained and rinsed

1 large avocado, diced

1 cup cherry tomatoes, halved

½ cup cucumber, diced

¼ cup red onion, thinly sliced

¼ cup Kalamata olives, halved

¼ cup feta cheese, crumbled

2 tbsp fresh parsley, chopped

For the Lemon Feta Dressing:

2 tbsp olive oil

1 tbsp fresh lemon juice

1 tsp lemon zest

1 garlic clove, finely minced

2 tbsp crumbled feta cheese

½ tsp dried oregano

Salt and pepper, to taste

Instructions

1. Prepare the Dressing:
In a small bowl or jar, whisk together olive oil, lemon juice, zest, garlic, feta, oregano, salt, and pepper until creamy and well blended. Set aside.

2. Assemble the Salad:
In a large mixing bowl, combine chickpeas, avocado, cherry tomatoes, cucumber, red onion, olives, and parsley.

3. Add the Dressing:
Pour the lemon feta dressing over the salad. Toss gently to coat all ingredients evenly without mashing the avocado.

4. Finish & Serve:
Top with extra feta for garnish. Serve immediately, or chill for 15–30 minutes for enhanced flavor.
