Christmas Peanut Butter Balls
Ingredients:
1 cup creamy peanut butter
½ cup unsalted butter, softened
2 cups powdered sugar
2 cups semi-sweet chocolate chips
1 tablespoon shortening or coconut oil (optional, for smoother chocolate coating)
Instructions:
1. In a large mixing bowl, beat together the peanut butter and softened butter until smooth and creamy.
2. Gradually add the powdered sugar, mixing until a thick dough forms. If the mixture feels too sticky, add a little more sugar.
3. Roll the mixture into 1-inch balls and place them on a baking sheet lined with parchment paper.
4. Chill in the refrigerator for about 30 minutes, or until firm.
5. Meanwhile, melt the chocolate chips and shortening (if using) in a microwave-safe bowl, stirring every 20 seconds until smooth.
6. Dip each peanut butter ball into the melted chocolate using a fork, letting the excess drip off.
7. Place the coated balls back on the parchment paper and refrigerate until the chocolate hardens, about 1 hour.
8. Store in an airtight container in the fridge for up to 2 weeks—or freeze for longer storage.
Tip: For a festive touch, drizzle white chocolate over the top or add holiday sprinkles before the coating sets!
