Peppermint Bark Cookies
A delightful blend of soft chocolate chip cookies and classic peppermint bark — the perfect treat for the holidays!
Ingredients
For the Cookies:
- 1 cup unsalted butter, softened
- 1 cup granulated sugar
- ½ cup packed brown sugar
- 1 large egg
- 1 teaspoon vanilla extract
- ½ teaspoon peppermint extract
- 2¼ cups all-purpose flour
- ½ teaspoon baking soda
- ¼ teaspoon salt
- ½ cup semi-sweet chocolate chips
For the Topping:
- 1 cup white chocolate chips
- ½ cup crushed candy canes or peppermint candies
- ¼ cup melted dark chocolate (optional, for drizzling)
Instructions
- Preheat the Oven:
Set your oven to 350°F (175°C). Line two baking sheets with parchment paper or silicone mats. - Prepare the Dough:
In a large mixing bowl, beat the butter, granulated sugar, and brown sugar together until light and creamy (about 2–3 minutes).
Mix in the egg, vanilla extract, and peppermint extract until smooth. - Add Dry Ingredients:
In a separate bowl, whisk together flour, baking soda, and salt. Gradually add this mixture to the wet ingredients until fully combined.
Stir in the chocolate chips. - Bake the Cookies:
Scoop tablespoon-sized portions of dough onto the prepared baking sheets, leaving about 2 inches between each.
Bake for 8–10 minutes, until the edges are set but the centers are still soft.
Let the cookies cool on the baking sheet for 5 minutes, then transfer them to a wire rack to cool completely. - Decorate the Cookies:
Melt the white chocolate chips in the microwave in 20-second intervals, stirring between each until smooth.
Spread a thin layer of white chocolate over each cooled cookie.
While the topping is still wet, sprinkle crushed candy canes on top.
(Optional) Drizzle with melted dark chocolate for a festive touch. - Set and Serve:
Allow the cookies to rest until the white chocolate hardens — you can speed this up by placing them in the fridge.
