Peppermint Bark Cookies 

A delightful blend of soft chocolate chip cookies and classic peppermint bark — the perfect treat for the holidays!

Ingredients

For the Cookies:

  • 1 cup unsalted butter, softened
  • 1 cup granulated sugar
  • ½ cup packed brown sugar
  • 1 large egg
  • 1 teaspoon vanilla extract
  • ½ teaspoon peppermint extract
  • 2¼ cups all-purpose flour
  • ½ teaspoon baking soda
  • ¼ teaspoon salt
  • ½ cup semi-sweet chocolate chips

For the Topping:

  • 1 cup white chocolate chips
  • ½ cup crushed candy canes or peppermint candies
  • ¼ cup melted dark chocolate (optional, for drizzling)

 

Instructions

  1. Preheat the Oven:
    Set your oven to 350°F (175°C). Line two baking sheets with parchment paper or silicone mats.
  2. Prepare the Dough:
    In a large mixing bowl, beat the butter, granulated sugar, and brown sugar together until light and creamy (about 2–3 minutes).
    Mix in the egg, vanilla extract, and peppermint extract until smooth.
  3. Add Dry Ingredients:
    In a separate bowl, whisk together flour, baking soda, and salt. Gradually add this mixture to the wet ingredients until fully combined.
    Stir in the chocolate chips.
  4. Bake the Cookies:
    Scoop tablespoon-sized portions of dough onto the prepared baking sheets, leaving about 2 inches between each.
    Bake for 8–10 minutes, until the edges are set but the centers are still soft.
    Let the cookies cool on the baking sheet for 5 minutes, then transfer them to a wire rack to cool completely.
  5. Decorate the Cookies:
    Melt the white chocolate chips in the microwave in 20-second intervals, stirring between each until smooth.
    Spread a thin layer of white chocolate over each cooled cookie.
    While the topping is still wet, sprinkle crushed candy canes on top.
    (Optional) Drizzle with melted dark chocolate for a festive touch.
  6. Set and Serve:
    Allow the cookies to rest until the white chocolate hardens — you can speed this up by placing them in the fridge.
