Ingredients
Base
1 cup mayonnaise
or Greek yogurt for a lighter, tangy version
4–5 garlic cloves, peeled
1 tablespoon olive oil (for cooking garlic)

1 tablespoon fresh ginger, finely grated
1 teaspoon fresh lemon juice (or apple cider vinegar)
Seasoning
½ teaspoon salt (adjust to taste)

Optional: pinch of white pepper or smoked paprika
Method
1️⃣ Prepare the Garlic
Option A – Sautéed (bold flavor):
Heat olive oil over medium-low heat.
Add garlic cloves and cook 6–8 minutes, turning often, until soft and golden.
Remove from heat and cool slightly.
Option B – Roasted (sweet & mellow):
Wrap garlic in foil with olive oil.
Roast at 180°C / 350°F for 20–25 minutes until soft and caramelized.
2️⃣ Build the Sauce
In a mixing bowl, add mayonnaise (or yogurt), thyme, grated ginger, and lemon juice.
Whisk until well combined.
3️⃣ Blend
Add cooked garlic.
Use a blender, food processor, or immersion blender.
Blend until smooth, creamy, and golden.
4️⃣ Season & Chill
Add salt and black pepper.
Taste and adjust seasoning.
Cover and refrigerate for at least 30 minutes to allow flavors to deepen.
