Classic Shepherd’s Pie (Hearty Family-Size Recipe)

Ingredients
Meat Filling
1 lb (450 g) ground beef
1 medium onion, finely chopped
2 cloves garlic, minced
1 cup frozen peas & carrots (or mixed vegetables)
1 cup beef broth
1 tablespoon tomato paste
1 tablespoon Worcestershire sauce
1 tablespoon olive oil or butter
1 teaspoon salt (or to taste)
½ teaspoon black pepper
1 teaspoon paprika
½ teaspoon dried thyme (or rosemary)
1 tablespoon flour (for thickening)
Mashed Potato Topping
2½–3 lb potatoes (Yukon Gold or Russet), peeled & chopped
4 tablespoons butter
½ cup warm milk (add gradually)
Salt to taste
Optional:
½ cup shredded cheddar cheese
1 egg yolk (for extra-rich, golden topping)
Instructions
1️⃣ Make the Mashed Potatoes
Place potatoes in a large pot, cover with cold salted water.
Bring to a boil, then simmer 15–20 minutes until fork-tender.
Drain well.
Mash with butter, salt, and warm milk until smooth and fluffy.
(Optional) Mix in cheese or egg yolk. Set aside.
2️⃣ Prepare the Meat Filling
Preheat oven to 400°F (200°C).
Heat olive oil in a large skillet over medium heat.
Add chopped onion and cook 3–4 minutes until soft.
Add garlic, cook 30 seconds until fragrant.
Add ground beef. Cook until browned, breaking it apart. Drain excess fat.
Stir in flour and cook 1 minute.
Add tomato paste, Worcestershire sauce, paprika, thyme, salt & pepper.
Pour in beef broth and simmer 5–7 minutes until thickened.
Stir in peas and carrots. Remove from heat.
3️⃣ Assemble the Pie
Spread the beef mixture evenly in a baking dish.
Spoon mashed potatoes on top.
Spread gently with a fork (make ridges for crispy edges ).
Optional: brush top with melted butter or sprinkle extra cheese.
4️⃣ Bake
Bake uncovered for 25–30 minutes, until bubbling and golden.
For extra browning, broil for 2–3 minutes (watch closely!).
Serving Tips
Let rest 5–10 minutes before serving.
