Cozy Slow Cooker Italian Herb Potatoes

These Slow Cooker Italian Herb Potatoes are the perfect easy side dish. The potatoes slowly absorb the tangy Italian dressing, becoming tender, flavorful, and incredibly comforting. Perfect for family dinners, holidays, or busy days when you want something delicious with minimal effort.

 

 

 

Ingredients

2–2½ lbs red or yellow potatoes, halved or quartered

1 cup bottled Italian salad dressing (regular or zesty)

2 tbsp olive oil (optional, for extra richness)

1 tsp garlic powder

1/2 tsp black pepper

1/2 tsp salt (optional, depending on dressing saltiness)

1 tsp dried Italian seasoning (optional, for stronger herb flavor)

2 tbsp fresh parsley, chopped (optional, for garnish)

2 tbsp grated Parmesan cheese (optional, for serving)

 

 

 

 

Instructions

1. Prepare the potatoes

Wash and scrub the potatoes well.

Cut into halves or quarters so they cook evenly.

No need to peel unless preferred.

2. Season and combine

Place potatoes in the slow cooker.

Pour the Italian dressing over the potatoes.

Add olive oil, garlic powder, black pepper, salt, and Italian seasoning.

Toss well to coat evenly.

3. Cook

Cover and cook on LOW for 5–6 hours

or HIGH for 3–4 hours,

until potatoes are fork-tender.

4. Finish and serve

Gently stir before serving.

Sprinkle with fresh parsley and Parmesan cheese if desired.

 

 

 

Serve warm.

Use baby potatoes for the best texture.

Do not overcook, or potatoes may become too soft.

For crispy edges, place cooked potatoes under the broiler for 5 minutes after slow cooking.
