Creamed Chipped Beef on Toast (sometimes nicknamed “SOS” – creamed beef gravy on toast) is a classic American comfort dish that dates back to military kitchens and farmhouse breakfasts. Thin slices of dried beef are simmered in a rich, buttery white gravy, then spooned over warm toasted bread.

It’s simple, inexpensive, and incredibly satisfying—perfect for a hearty breakfast, quick supper, or whenever you’re craving a nostalgic meal.

4 tablespoons butter

4 tablespoons all-purpose flour

2 cups whole milk

1 jar (2.5–3 oz / 70–85 g) dried chipped beef, sliced or chopped

¼ teaspoon black pepper

Pinch of salt (optional, dried beef is already salty)

For Serving

4–6 slices bread, toasted

(white bread is traditional, but any bread works)

Optional Extras

¼ teaspoon garlic powder

2 tablespoons cream cheese (extra creamy version)

Chopped parsley for garnish

 

 

Instructions

1️⃣ Prepare the Beef

Remove the dried beef from the jar and chop it into bite-size pieces.

 

If the beef tastes very salty, rinse it briefly under cold water and pat dry.

2️⃣ Make the Roux (Gravy Base)

In a medium skillet or saucepan over medium heat:

Melt the butter.

Add the flour.

Whisk constantly for 1–2 minutes.

This creates a roux, which thickens the gravy.

3️⃣ Add the Milk

Slowly pour in the milk, whisking constantly to prevent lumps.

Continue cooking and stirring for 3–5 minutes until the sauce becomes smooth and thick.

4️⃣ Add the Beef

Stir in:

Chopped dried beef

Black pepper

Let everything simmer for 2–3 minutes, allowing the beef to warm and the flavors to blend.

Taste and add a little salt only if needed.

5️⃣ Toast the Bread

While the gravy finishes cooking:

Toast 4–6 slices of bread until golden and crisp.

Place toast on plates.

6️⃣ Serve

Spoon the creamy chipped beef gravy generously over the toast.

Garnish with parsley if desired and serve immediately.
