This slow cooker 4-ingredient Dr Pepper corned beef is the kind of easy, comforting meal that feels almost too simple for how flavorful it turns out. The soda works like magic, helping tenderize the brisket while adding a subtle sweetness that balances the salty, savory flavor of the corned beef. Brown sugar deepens the caramelized notes, and Dijon mustard adds just enough tang to keep everything balanced.
As the brisket slowly cooks, it becomes incredibly tender, soaking up the rich Dr Pepper braising liquid. Ingredients
Servings: 6
3–4 lb corned beef brisket (with seasoning packet, if included)
3 cups Dr Pepper (not diet)
1/4 cup packed brown sugar
2 tablespoons Dijon mustard
Directions
Prepare the brisket
Unwrap the corned beef brisket and rinse it briefly under cold water to remove excess surface brine. Pat it dry with paper towels. If your corned beef comes with a seasoning packet, set the packet aside for another use so you keep this recipe to just four ingredients.
Add to the slow cooker
Place the brisket in the bottom of a slow cooker with the fat side facing up.
Mix the sauce
In a small bowl, stir together the Dr Pepper, brown sugar, and Dijon mustard until the sugar is mostly dissolved.
Pour and coat
Pour the mixture over the brisket, making sure the meat is mostly covered by the liquid.
Slow cook
Cover and cook on LOW for 7–8 hours or HIGH for 4–5 hours, until the corned beef is very tender and easily pierced with a fork.
Rest the meat
Carefully remove the brisket from the slow cooker and place it on a cutting board. Let it rest for about 10 minutes before slicing.
Slice and serve
Slice the corned beef against the grain into thick slices. Spoon some of the flavorful Dr Pepper cooking liquid over the top before serving.
Tip:
If you want a thicker sauce, pour the cooking liquid into a small saucepan and simmer it for 5–10 minutes until slightly reduced and glossy.
