Slow Cooker 4-Ingredient Corn Chowder

A friend dropped off a pot of this on a freezing afternoon, and after one spoonful I had to ask for the recipe. It’s a creamy, comforting bowl made with just four simple ingredients.

This slow cooker 4-ingredient corn chowder is exactly the kind of cozy, creamy meal you want on a cold day. It’s amazingly simple, yet it turns into a rich and satisfying soup by dinnertime. Just four everyday ingredients go into the slow cooker, and hours later you’re rewarded with a pale yellow, velvety chowder filled with sweet corn and soft, tender chunks of potato. It’s the perfect no-fuss, family-friendly dish you can prepare in the morning and come home to when everyone is ready for something warm and comforting.

 

 

 

Serve this chowder in warm bowls with plenty of freshly cracked black pepper on top. If you’d like, add a sprinkle of shredded cheese or a little crumbled bacon for extra flavor. It pairs wonderfully with a simple green salad, a pan of cornbread, or just some buttered toast or crackers for dipping. For kids, you can even set out small toppings like extra corn, cheese, or crushed crackers so they can decorate their own bowls and get excited about dinner.

Slow Cooker 4-Ingredient Corn Chowder

Servings: 6

Ingredients

1 (32-ounce) bag frozen corn (about 4 cups)

2 cups diced potatoes (about 2–3 medium potatoes)

3 cups chicken broth

1 (8-ounce) package cream cheese, cut into cubes

 

 

 

Directions

1. Prepare the potatoes

Peel the potatoes and cut them into small bite-size cubes so they cook evenly and become tender.

2. Add ingredients to the slow cooker

Place the frozen corn and diced potatoes into the slow cooker. Pour in the chicken broth, then add the cubed cream cheese on top.

3. Cook slowly

Cover and cook on LOW for 6–7 hours or HIGH for 3–4 hours, until the potatoes are soft and fully cooked.

4. Stir until creamy

Once the cooking time is finished, stir the soup well so the cream cheese melts completely into the broth. This will give the chowder its smooth, creamy texture.

 

 

 

5. Serve

Ladle the hot chowder into bowls and season with freshly cracked black pepper to taste.

Tips

For a thicker chowder, mash a few of the potato pieces directly in the slow cooker before serving.

Leftovers can be stored in the refrigerator for 3–4 days and reheated gently on the stove or in the microwave.
