1 cup cottage cheese

1/2 cup almond flour

1/4 cup lemon juice

2 tbsp honey

1 tbsp poppy seeds

1 tsp lemon zest

1 egg

Step 1: Preheat & Prep

Preheat oven to 350°F (175°C). Line a mini muffin tin with 20 liners or grease well.

 

Step 2: Mix Wet Ingredients

In a bowl, blend cottage cheese, lemon juice, honey, lemon zest, and egg until smooth.
