This treasured recipe was passed down to me by my stepmom Linda, and it completely transformed the way I bake. Made with simple pantry staples—ripe bananas, warm cinnamon, flour, sugar, and butter—it turns into something truly special in the oven. The loaf bakes up soft and tender, with a perfectly sweet flavor and a beautifully rustic, swirled top that looks delightfully imperfect—just like homemade baking should be.

Cinnamon Banana Loaf
Servings: 8–10 slices
Ingredients:
3 ripe bananas, mashed
1/2 cup (115g) unsalted butter, melted
3/4 cup (150g) granulated sugar
2 large eggs
1 teaspoon vanilla extract
1 1/2 cups (190g) all-purpose flour
1 teaspoon baking soda
1/2 teaspoon salt
1 teaspoon ground cinnamon
Optional Cinnamon Swirl:
2 tablespoons brown sugar
1/2 teaspoon cinnamon
Instructions:
Preheat & Prepare:
Preheat your oven to 175°C (350°F). Grease a loaf pan or line it with parchment paper.
Mix Wet Ingredients:
In a large bowl, mash the bananas until smooth. Stir in melted butter, then add sugar, eggs, and vanilla extract. Mix until well combined.
Add Dry Ingredients:
Sprinkle in flour, baking soda, salt, and cinnamon. Gently fold everything together until just combined—do not overmix.
Create the Swirl (Optional):
In a small bowl, mix brown sugar and cinnamon. Pour half the batter into the pan, sprinkle the cinnamon sugar, then add the remaining batter. Lightly swirl with a knife.
Bake:
Bake for 50–60 minutes, or until a toothpick inserted in the center comes out clean.
Cool & Serve:
Let the loaf cool slightly before slicing. Serve warm or at room temperature.
