These classic Southern-style pecan pralines are rich, buttery, and perfectly sweet, yet unbelievably simple to make. Inspired by the charming candy shops of New Orleans, this easy version skips complicated steps and delivers the same melt-in-your-mouth texture using just three pantry staples.
Whether you need a last-minute dessert or a quick homemade treat, these pralines are always a hit.
Servings: 18–24 pralines
Ingredients:
2 cups pecan halves
1 cup packed light brown sugar
1/2 cup unsalted butter (1 stick), cut into pieces
Directions:
Prepare your tray:
Line a large baking sheet with aluminum foil (shiny side up) and lightly grease it with butter or nonstick spray. Set it near the stove—you’ll need to work quickly later.
Toast the pecans:
Place the pecan halves in a dry skillet over medium heat. Toast for 4–6 minutes, stirring frequently, until fragrant and slightly darker. Remove from heat and set aside.
Make the caramel base:
In a medium heavy-bottomed saucepan, combine the brown sugar and butter. Cook over medium heat, stirring constantly.
At first, the mixture will look grainy, then it will melt into a smooth, glossy caramel.
Bring to a gentle boil:
Once fully melted, let the mixture bubble gently for about 2–3 minutes, continuing to stir. It should thicken slightly and deepen in color.
Add the pecans:
Stir in the toasted pecans, making sure they’re fully coated in the caramel.
Shape the pralines:
Working quickly, drop spoonfuls of the mixture onto the prepared foil, spacing them apart. Each spoonful will form one praline.
Cool and set:
Let the pralines cool completely at room temperature until firm (about 20–30 minutes). Once set, peel them off the foil.
