Ingredients
8 ounces (225 g) pasta (rotini, penne, or your favorite short pasta)
1 cup cooked shrimp, peeled, deveined, and chopped if large
1 cup crab meat, picked over for shells
½ cup celery, finely chopped
½ cup cherry tomatoes, halved
¼ cup red onion, finely diced
½ cup mayonnaise
2 tablespoons fresh lemon juice
1 tablespoon Dijon mustard
1 tablespoon fresh parsley, chopped
Salt and black pepper, to taste
Instructions
Cook the pasta according to package directions until al dente. Drain and rinse under cold water to stop the cooking process. Allow it to cool completely.
In a large mixing bowl, combine the cooled pasta, shrimp, crab meat, celery, cherry tomatoes, and red onion.
In a separate small bowl, whisk together the mayonnaise, lemon juice, Dijon mustard, parsley, salt, and pepper until smooth and creamy.
Pour the dressing over the pasta mixture and gently toss until everything is evenly coated.
Cover and refrigerate for at least 1 hour to
