Apple Cider Pork Roast with Honey & Herbs (Tender, Juicy & Fall-Inspired Comfort Dish)

Introduction

Apple Cider Pork Roast is a warm, cozy, fall-inspired dish made with tender pork slowly roasted in a sweet and tangy apple cider glaze. The cider gently breaks down the meat, making it incredibly juicy and flavorful, while herbs and aromatics add depth and comfort to every bite. Ingredients

1.5–2 kg pork shoulder or pork loin roast

2 cups apple cider (fresh is best)

2 tablespoons olive oil

1 large onion, sliced

4 garlic cloves, minced

2 apples, sliced (Granny Smith or Honeycrisp)

2 tablespoons honey or brown sugar

1 tablespoon Dijon mustard

1 teaspoon salt

1/2 teaspoon black pepper

1 teaspoon dried thyme (or rosemary)

1 cup chicken broth

1 tablespoon apple cider vinegar

Instructions

Prepare the pork

Pat the pork dry and season it generously with salt, pepper, and thyme.

Sear for flavor

Heat olive oil in a large pan and sear the pork on all sides until golden brown. This locks in the juices.

Build the base

In a roasting pan, add sliced onions, garlic, and apples. Place the seared pork on top.

Make the glaze

In a bowl, mix apple cider, chicken broth, honey, Dijon mustard, and apple cider vinegar. Pour it over the pork.

 

 

 

 

Slow roast

Cover with foil and roast at 160°C (320°F) for about 2.5–3 hours, basting occasionally, until the pork is tender and easy to shred.

Finish & serve

Remove foil in the last 20 minutes to allow the top to caramelize slightly. Let rest before slicing.

Serving Suggestion

Serve with mashed potatoes, roasted vegetables, or buttery rice. Spoon the apple cider sauce over the top for extra flavor.
